I know that many of us in this part of the world are trying to figure out what to do with all those apples at this time of year! So, I thought we could share some of our recipes!

This is a wonderful recipe for cookies...

Caramel Apple Cookies

1/2 cup shortening
1 1/4 cup packed brown sugar
1 egg
1/2 cup apple juice, divided
2 1/4 cups all purpose flour
1 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
1/4 tsp ground cloves
1 cup apples, peeled and shredded (one good sized apple will do it!)

Frosting:
3 TBS margarine, softened
1/3 cup packed brown sugar
2 TBS water
1 1/2 cup confectioners sugar
2 TBS milk
1 cup finely crushed walnuts

Beat shortening and sugar well until blended. Blend in egg. Mix in 1/4 cup apple juice, then combine flour, baking soda, salt and spices and mix in remaining apple juice and apples. (You can do all this with a mixer - the dough isn't as thick as most cookie doughs!)

Drop by rounded teaspoonfulls onto greased cookie sheets (or use parchment paper). Bake at 350 until browned - 10-12 minutes.

Cool on wire racks.

For caramel frosting:

Heat margarine, brown sugar, and water over medium high heat in saucepan, stirring just until sugar dissolves. Remove from heat, and beat in powdered sugar and enough milk to make it a spreadable consistency (may take more or less than 2 TBS), ice cookies immediately. Sprinkle walnut pieces on top.

(Iif the icing starts to harden on you, put it back on low heat and stir in more milk!)

While I'm at it, here's my favourite apple crisp recipe!

3 1/2 pounds apples - peeled, cored and sliced
1/2 cup butter
1 cup brown sugar
1 cup all-purpose flour
3 packets instant maple and brown sugar oatmeal
1 pinch salt
1/2 cup chopped walnuts
1/4 cup maple syrup

Preheat oven to 350 degrees F (175 degrees C).

Place apples in a 9x13 inch baking dish.

In a bowl, cream together butter and sugar. Stir in flour, instant oatmeal and salt. Fold in walnuts.

Sprinkle oatmeal mixture evenly over apples.

Drizzle with maple syrup.

Bake in preheated oven 50 to 70 minutes, until apples are tender and topping is golden.

Serve topped with vanilla ice cream or Cool Whip!

(You can also use peaches or pears rather than apples!)

I like to slice up apples in the crock pot with apple pie spice, stevia (1 packet for each apple) and a little water and just let them stew all day. The smell is heavenly and served with a little bit of whipped cream is like a pretty low calorie apple pie!

I bake them in the oven for a side dish. I just peel them, slice them, and smother them in brown sugar, cinnamon and butter, then bake at 350 degrees for an hour.

Or, if you'd rather have them for dessert, you can drizzle caramel ice cream topping on them and put a scoop of vanilla ice cream on top.

But the crock pot idea sounds delicious, and I would love having that smell in my house all day!

Well, I'm hungry. :lol:

My only real recipe of my own with apples, is more with the juice.

3 cups of apple juice
half an orange sliced
5 cloves
1 tablespoon of cinnamon chips

Brown sugar to taste

Put the first 4 ingredients in a pot and bring to a gentle simmer. Allow to simmer for at least ten minutes while pressing some of the juice out of the orange slices. Strain, and add brown sugar to taste.

Just a less expensive alternative to spiced apple cider if you have to buy it pre-made. It has less of a Cidery flavor, but I like it.

I'm soooo gonna try this recipe! Thanks for the great idea Morgane...yum.

What's better for this recipe? I mean what kind of apples?

I've used almost every kind of apple imaginable...My kids love them!

Golden or red delicious are my favourites!

We pick wild New Mexico apples off the side of the road and dehydrate them for use later easier than canning and they keep a long time

I'm going apple picking this month with my niece and cousins. I will definitely keep these recipes in mind!
